Description

This Copycat Chipotle Chicken Recipe is THE recipe you need to make your favorite chipotle bowls at home! It’s easy to make and also perfect to meal prep for easy meals all week long. 


Ingredients

  • 2 pounds boneless skinless chicken thighs, fat trimmed

Chipotle Marinade

  • 2 chipotle peppers in adobo sauce
  • 1/4 cup olive oil
  • 4 cloves garlic garlic
  • 1 1/2 teaspoons cumin
  • 1 1/2 teaspoons chili powder
  • 1 1/2 teaspoons kosher salt
  • juice and zest of 1 lime
  • 1 1/2 teaspoons dried oregano
  • 1 teaspoon smoked paprika
  • 1 1/2 teaspoons onion powder


Instructions

  1. Make the Chipotle Marinade: Add all of the marinade ingredients to a high-powered blender and blend until smooth. 
  2. Place the chicken thighs into to a large mixing bowl. Pour the marinade over the chicken thighs and toss until they are well coated in the marinade. Cover and let the chicken marinade, in the fridge, for at least 30 minutes or up to overnight. 
  3. After the chicken has marinated remove it from the fridge.
  4. Heat a large skillet or grill pan over medium-high heat. Once hot, add the chicken to the skillet. Cook the chicken thighs until they reach an internal temperature of 165 degrees Fahrenheit, around 6-8 minutes per side. You may have to do this in batches depending on the size of your skillet. 
  5. Let the chicken rest before slicing and serving either with sides or in a burrito bowl.
