Salad season is finally here which means it’s time bring on all of the creamy, flavor-filled, delicious dressings and sauces. When the weather starts to warm up, there is nothing better than a crisp fresh salad drizzled with a creamy dressing to just tie everything together. The bonus is when the dressing can also double as a dip or sauce for veggies or smoky grilled meats. So delicious!
This easy spicy lime tahini dressing is so creamy and delicious while also being completely vegan. It makes a great dip for veggies, a sauce for tacos, and of course the perfect dressing for a crisp fresh salad.
This dressing is so good that you might think it’s a bit complicated to make, but, thankfully, it couldn’t be easier. All you need are a few simple ingredients and a food processor or blender to whip this up. The base of this dressing is tahini. Tahini is made from ground sesame seeds and if you’ve never given it a try I highly suggest you do. It’s got a pretty strong flavor (which I personally love), but if you’re not a fan of eating it straight out the jar, using it in a dressing like this is a great idea.
Here’s what we’re working with:
tahini (this is my new favorite brand and it’s SO GOOD)
chipotle peppers in adobo for that spicy kick
lime juice for that tang
green onions and cilantro for herby goodness and all the flavor
olive oil to bring it all together
Once you’ve got all of your ingredients, just blend and you’re done! So easy. You can store your dressing in the fridge for up to a week (if it lasts that long) and put it on just about anything. You might find that your tahini dressing thickens as it sits in the fridge. That’s totally normal. Just add a little water or lime juice to the dressing to thin it out a bit when you’re ready to use!
1/2 cup tahini
1/4 cup olive oil
1/4 cup lime juice
2 cloves of garlic
1/4 cup cilantro leaves
1/4 cup green chopped green onions
3/4 tsp pink salt (plus more to taste)
1/2 cup water
Combine all of the ingredients in a high powered blender or food processor and blend until smooth and creamy. Store in an air-tight container in the fridge for a week. Enjoy!
