Anyone else immediately think of that when they hear anything about chia seeds or chia pudding?
Keeping this post short and sweet today because the recipe pretty much speaks for itself. Chocolate Almond Butter Chia Pudding…can you say delicious?
When it comes to quick healthy breakfasts or snacks, there’s nothing like a good chia seed pudding. Chia pudding only takes around five minutes to actually mix together. Once all your ingredients are combined you let the mix hang in the fridge for a few hours and before you know it you have a delicious filling chia seed pudding. How easy is that?!
One of my favorite chia puddings is this Five-Ingredient Vanilla Chia Pudding and it’s a simple classic chia seed pudding that everyone loves. But, sometimes you want something a little bit different, and this chocolate almond butter variety is exactly what you may be looking for!
This recip feels just a little more decadent because of the addition of almond butter and cocoa powder, but it’s still just as healthy and nutrient dense as the classic recipe.
You can try topping your chia pudding with berries and granola, like I have here, or sliced bananas, coconut, and chopped nuts would be great on top as well!
1/4c chia seeds
1/2c almond milk
1/2c coconut milk
2 tbsp cocoa powder
2 tbsp almond butter
1-2 tbsp maple syrup
1 tsp vanilla extract
1/4 tsp cinnamon
Whisk together all of the ingredients except the chia seeds.
Add the chia seeds and whisk again until well combined.
Pour the mix into a storage container (I love using canning jars) and place it in the refrigerator. After a few minutes, give it another stir to make sure everything is evenly combined.
Leave the chia pudding in the fridge overnight. In the morning give it a good stir and then top it with berries, your favorite granola, and even a little more nut butter if that’s your thing. Enjoy!
